All the recipes are made, tested, and retested if they don’t come out right, and absolutely nothing goes online unless it’s perfect as I say, and I’m sure you at home can achieve the same result. But at the moment, there’s this trend of “desugarizing” any dessert as if this alone makes it healthier. If there’s no sugar, it doesn’t make you gain weight and it’s not bad for you. It’s not quite like that. But I won’t delve into this explanation, which I know well, but it’s not my expertise. I only tell you that if you don’t have health-related needs, really important issues, forget about sugar-free desserts. Don’t eat an entire sugar-free bundt cake. A sugar-free dessert won’t satisfy your sweet cravings and will leave you unsatisfied. Just eat a single slice of bundt cake but make it a good one. In this lactose-free and sugar-free bundt cake, there’s apple pulp. It’s soft, it’s edible, it’s perfectly balanced in doses, but I can’t tell you it’s tasty and indulgent. You decide.

Ingredients

  • 1.1 lbs Golden apples
  • 3.5 cups all-purpose or pastry flour
  • 3 eggs
  • 1/2 cup rice oil (or other seed oil of choice)
  • 1 cup plant-based beverage (oat or rice)
  • 1 orange (grated zest)
  • 1 lemon (grated zest)
  • 1 packet baking powder

Steps

  • To obtain the apple pulp, I peel them, cut them into cubes, and cook them in the microwave at 650 W for 5/6 minutes. Once ready, they need to be removed from the oven, allowed to cool, and pureed using a chopper.

    In the bowl of the stand mixer or with an electric mixer, work the eggs with the sugar, add the lemon and orange zest, and the well-cooled apple puree. Then, add the flour and baking powder, alternating with the rice oil or chosen seed oil and the plant-based beverage. Mix the batter and then pour it into the 9.5-inch bundt pan. Bake in a preheated oven at 329 °F for about 35/40 minutes. Once baked (check with the skewer test), let it rest for a few minutes, then remove it from the pan and let it cool on a cooling rack.
