Savory Rose Tree

Christmas is coming, it’s almost here, the most awaited time.
Today I want to share a recipe that we really loved. The savory rose tree. To make it, I used my brioche dough recipe, which never disappoints me. For the filling, I used what I had at home, cheese, and cold cuts. But you can also make it with vegetables or, why not, with cream cheese and salmon. I’ll try it soon.

Ingredients

  • 4 cups Manitoba flour
  • 1 egg
  • 1 tsp sugar
  • 2 tsps salt
  • 3.5 tbsp lard
  • 1 cup milk
  • 0.35 oz fresh brewer's yeast
  • to taste sliced salami
  • to taste sliced cheddar
  • to taste pancetta
  • to taste grated cheese

Preparation

  • I used the Thermomix, but a stand mixer works fine, and for the more eager, you can knead by hand.

    In the Thermomix bowl, I poured the milk, sugar, and yeast. I let it run for 50 seconds at speed 5. I added the flour, egg, and salt and let it run for 2 minutes at kneading speed. While kneading, I added the lard. Once the dough was ready, I placed it in an oiled container to rise until it doubled in size.

    When it doubled, roll out the dough with the rolling pin and fill.

    Roll it up like a salami and cut into pieces.

    Place the pieces in a paper Christmas tree shape and let rise until doubled, covered with plastic wrap.

    After the time has passed, bake at 350°F for about 40 minutes
