How many versions of meat ragù exist? So many! I think every family has their own recipe. In this post, I’ll present mine. It’s very simple and very tasty. A soft and rich sauce, perfect for dressing pasta or filling lasagna. How do you prepare it? If you have different recipes, you could leave them in a comment; I’d be happy to read them.

Ingredients for the Meat Ragù
Sometimes I prepare this meat ragù using 10 oz of beef mixed with 7 oz of pork. Other times I add a sausage.
- 17.6 oz ground beef
- 1 stalk celery
- 1 carrot (medium)
- 1 onion (small)
- 3.4 fl oz dry white wine
- 14.1 oz tomato pulp
- 1 leaf bay leaf
- 1 clove garlic
- extra virgin olive oil
- salt

Preparation of the Meat Ragù
Peel the onion, trim the carrot, and remove the leaves from the celery. Wash the vegetables well and finely chop them.
In a pan, heat a few tablespoons of oil and let the chopped vegetables soften for a few minutes, stirring occasionally. Then add the ground meat.
Brown it well over low heat to seal it perfectly.
When it changes color, pour in the white wine, turn up the heat, and let it evaporate.
Then add the tomato pulp, bay leaf, peeled whole garlic clove (if you don’t like garlic, you can also omit it) and a generous pinch of salt.
Continue cooking over very low heat for about an hour with the pan covered, stirring often. If the meat ragù dries too much, add a few tablespoons of milk to soften it.
Once cooked, remove the garlic clove and bay leaf and adjust salt if necessary.
The meat ragù is ready to be used. It can also be frozen. Enjoy!
