- 7 oz pork or chicken or veal cutlets
- 1 shallot
- oil and salt to taste

Here’s the procedure:
Start making the asparagus scallops by lightly flouring the meat slices and cooking them in a drizzle of oil and a knob of butter.
Meanwhile, wash and clean the asparagus: remove the woody end and cut them into small cubes.
Set aside the tips
In a pan, sauté the finely chopped shallot and add the asparagus cubes
Cook by adding a glass of water or broth. Add the tips halfway through cooking and salt. It will take about 5 minutes, the time may vary depending on the size of the asparagus but just insert the prongs of a fork into a piece of asparagus to check if they are tender.
When cooked, place half of the cooked stems in a chopper with two drizzles of oil and blend.
