Ingredients

  • 2 chicken breasts (14 oz each)
  • 1/2 head lettuce
  • 2 Fuji apples
  • 3 oz g parmesan shavings
  • 1 lemon
  • 4 tablespoons extra virgin olive oil
  • to taste salt
  • 20 Taggiasca olives (pitted)
  • 1 orange

Steps

  • Cut the chicken breasts in half and place them in a bowl. Season with salt and the juice of half a lemon. Massage well, cover, and let rest in the refrigerator for an hour. Brush the chicken breast with a little olive oil and grill on a grill pan or, if preferred, cook in an air fryer at 356°F for 12 minutes, turning halfway through. Once cooked, let it cool slightly, then cut into strips or cubes. Peel the apples, remove the core, grate them with a coarse grater, and dress with the remaining lemon juice. Peel the orange and cut it into pieces. Wash the lettuce, dry it, and chop it. On a serving dish, place the lettuce, grated apples, chicken, orange, olives, and Parmesan shavings. Season with salt and oil and serve.
