Ingredients for Baked Jerusalem Artichokes
- 1.75 lbs Jerusalem artichokes
- A few sprigs rosemary
- A few leaves sage
- garlic powder
- extra virgin olive oil
- salt
- black pepper

Preparation of Baked Jerusalem Artichokes
Wash the Jerusalem artichokes thoroughly by scrubbing them with a brush to remove any dirt residues.
Then peel them with a peeler and quickly rinse them again under running water. It’s not necessary to remove every tiny bit of skin as it is absolutely edible.Cut them into chunks that are as uniform in size as possible.
Transfer them to a bowl, add some rosemary needles, a few torn sage leaves, a couple of generous pinches of salt, a good grind of black pepper, a pinch of garlic powder, and drizzle everything with a few tablespoons of oil. Finally, mix to perfectly season every piece.
Transfer everything to a baking tray lined with parchment paper, trying to arrange the Jerusalem artichokes in a single layer. Place some rosemary sprigs here and there.
Transfer the tray to a preheated convection oven at 375°F and bake for about 25 minutes plus a few minutes on the grill setting to make them a little golden.
Remove the burnt rosemary sprigs, add a few fresh needles, and serve the baked Jerusalem artichokes immediately, piping hot. Enjoy!
