Super quick and super tasty. That’s how I would describe this brie and bacon puff pastry that took me more time to photograph than to prepare. It’s a savory and very appetizing tart. Perfect served as an appetizer or as a rustic dish for a quick dinner.

Ingredients for the brie and bacon puff pastry
- 1 sheet puff pastry (rectangular)
- 7 oz brie
- 2.1 oz bacon (thin slices)
- A few sprigs thyme
- black pepper

- 1 Baking tray
Preparation of the brie and bacon puff pastry
Unroll the rectangle of puff pastry, keeping it placed on the parchment paper provided in the package, then gently roll over it with the rolling pin to smooth it out evenly.
Now fold the entire perimeter of the rectangle inward, as shown in the photo, then fold the small border obtained onto itself to form a sort of “cord container”.
Transfer this base into a baking tray and prick the entire bottom with the tines of a fork.
Cut the brie into thin slices (if it is too soft, I recommend putting it in the freezer for about ten minutes) and cut the bacon slices in half.
At this point, arrange the slices of cheese and bacon on the pastry base, slightly overlapping them.
Season the entire surface with a generous grind of black pepper and some thyme leaves.
Bake the brie and bacon puff pastry in a preheated static oven at 392°F (200°C) for 15/20 minutes or until it is well golden. Remove from the oven and let it cool slightly before serving it cut into squares. Enjoy! Paola
