Ingredients

  • 4 eggs
  • 6 oz sugar
  • 2.5 cups all-purpose flour
  • 1/2 cup rice oil (or other vegetable oil of choice)
  • 1.5 cups plain Greek yogurt
  • 1 packet baking powder

Steps

  • In the bowl of the mixer, beat the eggs with the sugar until they are light and fluffy, add the Greek yogurt and mix. Then add the flour and the rice oil (or another vegetable oil of choice) pouring it in slowly with the mixer running. Finally, add the baking powder. Mix everything well and transfer the batter into the greased and floured pan. If you’re using a particularly decorated pan like me, it’s better to use release spray that reaches everywhere. Bake the cake in a preheated oven at 350 °F for 40 minutes but always remember to check doneness with a skewer before removing it from the oven.
