Soft Croissants without Rising

The soft croissants without rising are very easy to make, without butter and eggs they are delicious and light treats for breakfast. I like them as they are, simple, but you can fill them as you like either before or after baking with spreads or jams. And if you want, you can also add chocolate chips to the dough. There are no rising times because baking powder is used, so they go straight into the oven and keep well for two or three days, but don’t worry about how you’ll store them because the soft croissants without rising are “one leads to another” and will be gone in no time!

  • Cooking methods: Oven, Electric Oven
  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup margarine
  • 1/2 cup plain natural yogurt (lactose-free for me)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 packet baking powder

Tools

  • 1 KitchenAid Artisan Mixer
  • 1 Bowl
  • 2 Reusable parchment paper sheets
  • 1 Rolling pin
  • 1 Kitchen Knife
  • 1 Cooling rack

Steps

  • Place all the ingredients in the mixer bowl and work until you get a nice compact but soft dough. Transfer it into a bowl, cover it, and let it rest in the refrigerator for twenty minutes. After the resting time, place it back on the work surface and roll it out with the rolling pin between two lightly floured reusable parchment paper sheets. Cut sixteen wedges and roll them from the wider side to the tip. Arrange them on a baking sheet lined with reusable parchment paper and bake in a preheated oven at 320 °F for 15/18 minutes: they should be slightly golden. Let the croissants cool on a rack, sprinkle with powdered sugar, and serve.

Notes

The dough is soft but not sticky. The advice is to work calmly to form the croissants but do not add flour otherwise, these treats will lose their softness.
