Penne with mushrooms and shrimp is a simple and tasty recipe that’s very easy to prepare: a few steps and in no time you’ll have a delicious first course on the table! Not everyone loves the surf and turf combination, but I find that here mushrooms, shrimp, and a rocket and basil pesto make this pasta really special. Ingredients
- 6.5 oz penne
- 2 tbsps basil pesto
- 1 cup arugula
- 4.6 oz cleaned shrimp
- 0.7 oz leek
- 2 tbsps grated Parmesan cheese
- 2 tbsps extra virgin olive oil
- to taste salt
- 4.4 oz champignon mushrooms

Steps
In the chopper, place the washed and dried arugula and the pesto and blend everything. Season the already cleaned shrimp with oil and salt, cover them, and keep in the refrigerator. Clean the mushrooms and slice them. Finely chop the leek. Let it stew in a pan with oil until wilted, then add the mushrooms and let them cook on high heat. When the mushrooms are ready, add the shrimp and let them cook for a couple of minutes. Turn off the heat and set aside. Boil the pasta in plenty of salted boiling water, drain it and pour it into the casserole with the seasoning, letting it flavor by adding a bit of cooking water if needed. Add the arugula and basil pesto, a few arugula leaves, mix well, and serve immediately.
