Gratinated Beans

Today, a quick recipe. I offer you some gratinated beans that are as simple as they are appetizing and tantalizing. I wouldn’t know how to label this recipe. A second course? A snack? It could be both. What I know for sure is that they are delicious. I made them intending to serve them for lunch, but as soon as I took them out of the oven, we ate them with our fingers, so much so that they never even made it to the table. Tell me if they met the same fate at your place.

  • Seasonality: All seasons

Ingredients for Gratinated Beans

  • 1 clove garlic
  • 1 red onion
  • 8.5 oz Spanish white beans (drained weight)
  • 1/4 cup Grana Padano cheese, grated (or Parmesan)
  • 1 teaspoon paprika
  • extra virgin olive oil

Tools

  • 1 Baking tray
  • 1 Colander
  • 1 Strainer
  • 1 Small bowl

Preparation of Gratinated Beans

  • Rub a garlic clove over the bottom of a baking tray, then drizzle with a little olive oil.

  • Drain the Spanish white beans from their preserving liquid and rinse them thoroughly under running water.

  • Then, transfer the beans into the baking tray.

Peel an onion, cut it into wedges, and tuck them here and there among the beans.

  • In a small bowl, mix the grated cheese with a teaspoon of paprika and sprinkle this mixture over the beans.

  • Bake in a preheated oven at 390°F for about 15 minutes or until the gratinated beans are nicely golden. I used a static oven, but a convection one works as well. In the latter case, lower the temperature to 375°F and bake for the same time. Enjoy! Paola.
