Ingredients for Rustic Potato Puff Pastry

  • 1 sheet puff pastry (rectangular)
  • 12 oz potatoes (net weight after peeling)
  • 5.25 oz crescenza cheese
  • 1.75 oz Grana Padano cheese, grated (or Parmesan)
  • 3.5 oz speck (thinly sliced)
  • salt
  • black pepper

  • 1 Grater large holes
  • 1 Bowl
  • 1 Wooden Spoon
  • 1 Fork
  • 1 Baking Sheet

Preparation of Rustic Potato Puff Pastry

  • Peel the potatoes, wash them, pat dry with kitchen paper, and grate them using a grater with large holes. 

  • Transfer them to a bowl and add 1 oz of grated cheese, the crescenza cheese, a couple of generous pinches of salt, and a good grind of black pepper. 

  • Mix everything carefully until you obtain a well-blended mixture.

  • Unroll the rectangle of puff pastry, keeping it on the parchment paper provided in the package, and prick it with a fork. 

  • Now cover the puff pastry with the slices of speck, removing any fatty parts. 

  • Spread the potato mixture evenly and sprinkle the entire surface with the remaining grated cheese. 

  • Slide the parchment paper with the puff pastry onto the baking sheet. 

  • Bake the rustic potato puff pastry in a fan-assisted oven, preheated to 392°F (200°C) for 20/25 minutes or until it is nicely browned. Remove from the oven and enjoy while hot. Enjoy! Paola
