Strawberry Jelly Hearts are small, soft, gelatinous treats made with fresh strawberries.
Only a few ingredients are needed for these little hearts, which can become candies by adding extra gelatin, or simply fruit jelly to serve cold on their own or to garnish fruit and cream cups, fruit salad, ice creams, cakes.
These bites are really very good and genuine because they are homemade, also great for our children’s snack.
To make them heart-shaped, I used the “ghiacciocuori” silicone mold in the shape of little hearts from the Happyflex company, a pure food-grade silicone mold for oven and freezer.

Ingredients for Strawberry Jelly Hearts
- 6.35 oz Strawberries
- 1.41 oz Sugar
- 3 Gelatin sheets
- 1 teaspoon Lemon juice
- 1 silicone mold (ghiacciocuori)
Preparation for Strawberry Jelly Hearts
To prepare the strawberry jelly hearts, start by cleaning and washing the strawberries. They should weigh 6.35 oz cleaned. Weigh all the ingredients and soak the gelatin sheets in a little cold water. Blend the strawberries with the sugar and lemon juice using a mixer, then pour into a non-stick saucepan and cook over medium heat for about 5 minutes. Turn off the heat and add the squeezed gelatin sheets, stir and mix the gelatin well.
If you want firmer, gummy jellies, add a few more gelatin sheets. Take the ghiacciocuori mold and fill it with the blended fruit mixture. Let it rest at room temperature for about half an hour, then cover with plastic wrap and allow to set in the fridge for at least 3 hours.
After approximately 3 hours, the jellies should be solidified. For extra security before removing them, put them in the freezer for 8 to 10 minutes.
Carefully remove the strawberry jelly hearts. If desired, after resting, you can coat them with granulated sugar and then serve.

Colorful and very soft, the strawberry jelly hearts can be an easy and fun way to get children to eat a genuine product and especially some fruit. Naturally, you can also use a different type of fruit, such as raspberries, blackberries, and prepare them with orange and lemon juice as well.
They keep in the fridge in a container with an airtight lid or covered with plastic wrap, for up to one week.
