Ingredients

  • 2 fillets sea bream
  • 1 tablespoon lemon marmalade
  • 1 tablespoon balsamic glaze
  • 1 spring onion
  • 2 fennels
  • 1/2 lemon
  • 3 tablespoons extra virgin olive oil
  • to taste salt

Steps

  • Clean the fennels, cut them into quarters, wash them, and slice them thinly with the mandoline. Transfer them into a bowl with cold water or water and ice and let them rest for 20 minutes.

    Use the special tweezers to remove any bones from the sea bream fillets. Clean the spring onion and chop it finely. In a small bowl, mix the lemon marmalade with balsamic glaze and the spring onion. Salt the fish fillets, brush them with the marmalade-based sauce, place them in the air fryer (or oven) with the perforated parchment paper, and cook at 375 °F for 8 minutes.

    Prepare an emulsion with oil, lemon juice, and pepper. Drain the fennels, dry them, and dress them with the emulsion.

    Serve the sea bream fillets piping hot with the fennel carpaccio.
