The Soft Cake with Jam is easy and quick to prepare. Moreover, it is also very scenic, and different from the usual. I found the recipe while browsing Facebook and decided to try it. We really liked it, and I think I’ll make it again soon, maybe changing the jam flavor.

Ingredients for the Soft Cake with Jam
- 1 1/2 cups all-purpose flour
- 6 tbsp milk
- 6 tbsp sunflower oil
- 1/3 cup sugar
- 2 eggs
- 1 pinch salt
- 1 packet vanillin
- Half packet baking powder (8 grams)
- 4 tablespoons apricot jam

- 1 Cake pan 8 inches diameter

Preparation of the Soft Cake with Jam
WITHOUT BIMBY: In a bowl, mix with a mixer (or a whisk) the eggs together with the sugar, oil, and milk. Then add the pinch of salt, vanillin, baking powder, and sifted flour. Mix everything well.
WITH BIMBY: Put the eggs, sugar, oil, milk, pinch of salt, vanillin, flour, and baking powder in the bowl. Operate at speed 4 for 20 seconds.
HOW TO DECORATE AND BAKE THE CAKE: Pour the obtained batter into a 8 inches cake pan with the base covered in parchment paper. Then take a pastry bag and fill it with the jam you want to use.
Now, using the pastry bag like a pen, draw a swirl or lines on the cake base. Once the decoration is done, bake the cake in a preheated oven at 340 degrees Fahrenheit for 30-35 minutes.
Do the toothpick test. If it is cooked, take it out of the oven and let it cool well before serving. You can sprinkle with powdered sugar if desired.
NOTES
You can add grated lemon zest if desired.
It keeps under a glass dome for a couple of days.
