Ingredients
- 4.2 oz frozen peas
- 1/2 red onion
- 0.7 oz soffritto mix
- 6 cherry tomatoes
- 1/2 lemon (juice)
- to taste salt
- 1 tablespoon extra virgin olive oil
Tools
- 1 High-sided saucepan
- 1 Mixer
- 1 Cutting Board
- 1 Kitchen Knife

Steps
In a small saucepan, cook the peas with a teaspoon of extra virgin olive oil, the soffritto mix, and a little water until they are soft: if you use frozen peas, you can follow the cooking instructions on the package, but it will take about 5 to 8 minutes of cooking. Transfer the peas to a mixer and blend them with the lemon juice and a tablespoon of oil. Wash the cherry tomatoes, cut them in half, remove the seeds, and dice them. Peel the onion and slice it thinly. Collect all the vegetables and blended peas in a bowl, season with salt, mix, and serve.
