Pistachio Ice Cream made at home with milk, fresh cream, sugar, and pistachio paste is delicious, healthy, fresh, and indulgent. If you love pistachios, you’ll definitely appreciate this ice cream! To prepare it, you should use pure 100% pistachio paste (pistachio spread is not suitable because it’s a different thing). Today, finding pistachio paste is easy: it’s readily available online from different brands, and almost all supermarkets have it. Among nut butters or creams, pistachio paste is the most expensive, but it’s worth it. Ingredients
With these quantities, you will obtain two small jars provided with the machine.
- 2 1/2 cups whole milk
- 1 cup cups fresh cream
- 6 oz sugar
- 3 tbsp 100% pistachio paste

Steps
Warm the milk on the stovetop or in the microwave (it should just warm up) then add the sugar and stir until it is well dissolved. Slowly add the cream and pistachio paste. Mix well with a whisk so that the pistachio paste melts and blends well with the other ingredients. Pour the base obtained into two small jars provided with the machine. Cover with the lid and place in the freezer for 24 hours. When placing the jars inside the freezer, make sure they are on a flat surface, upright, and that the cream inside is well leveled.
After the resting time, take a jar out of the freezer one at a time, remove the lid, and check that the mixture hasn’t frozen unevenly. Place the jar with the ice cream in the outer bowl of the machine. Install the paddles (or blades) on the top of the outer lid, securing them well. Place the lid on the bowl containing the ice cream and rotate it clockwise to lock it. Place the bowl on the motor base and lock it in place. When it’s in the right position, you’ll hear a click.
Select the ICE CREAM start program to begin processing. When processing is complete, all four dashes on the progress bar will flash and then turn off. Remove the bowl from the appliance and take out the jar with the softened ice cream, which will be ready to serve and enjoy.
Proceed in the same way with the second jar.
Notes
If there is leftover ice cream, store it in the freezer, and in case it is too hard when you use it next time (though this has never happened to me), just put it back in the machine and press the re-spin button.
“But this pistachio isn’t green.” Naturally! Pistachios shouldn’t be green. If you find them green in ice cream shops, leave them be. Real pistachios, natural ones, aren’t green; true pistachio ice cream has a dark, almost hazelnut-like coloration. Keep that in mind.
