Cook the pasta in boiling salted water. Cook it al dente, meanwhile, prepare the sauce.
In a non-stick pan add a drizzle of olive oil, add chopped onion, and let it sauté with a pinch of salt, then chop a zucchini into cubes and cook in the pan with a pinch of salt for a few minutes, covered.
Meanwhile, cut the fresh salmon into cubes, when the zucchini is tender add the salmon, sauté, then add some pasta cooking water, add the cheese, a bit of ground pepper, mix well, and once the pasta is drained, toss it in the pan with the prepared sauce, adding more cooking water if needed.
