Rustic Olive Bites

The rustic olive bites are fragrant little tasty and aromatic buns, soft, great to serve instead of bread. For my recipe, I used whole spelt flour and sliced green olives, but I would have preferred Taggiasca olives for a more intense flavor. If you want to serve the rustic olive bites with an aperitif, make them smaller and add a whole olive in the center of each bite: delicious with a platter of cold cuts and cheeses!

Ingredients

  • 1 1/3 cups whole spelt flour
  • 1 cup all-purpose flour
  • 3/4 cup water
  • 2 tsp dry yeast
  • 1/2 tsp sugar
  • 1 1/4 tsp salt
  • 2 tbsps extra virgin olive oil
  • 1/3 cup green olives (sliced)

Steps

  • In the bowl of the stand mixer, pour the water, oil, sugar, and salt. Add the flour and dry yeast. Start kneading and then add the sliced olives. Form a ball and transfer it into a bowl. Cover it and let it rise for two hours or until it doubles in size. After resting, transfer the dough to the work surface and divide it into eight portions. These are rustic bites, so they don’t need to be too precise or perfect. Place the small rolls on a baking sheet lined with parchment paper or an appropriate reusable mat, cover them and let them rest for an hour. Bake in a preheated static oven at 392°F for 25 minutes with a tray of cold water at the bottom of the oven to create humidity.

    If you have a steam oven, follow the program indicated by your oven.
