The gratin pasta with peas and leeks is a simple and delicious main course because, as we know, where there is gratin with that crispy crust, a little melted cheese makes any pasta immediately inviting and appetizing. It takes very little. This gratin pasta with peas and leeks really came out of nowhere. You know, right? When the fridge is almost empty, and you need to go shopping. And you have a leek. A small bowl of leftover cooked peas. A little piece of scamorza cheese and some grated parmesan. What does it take? Put it all together and off to gratin. But I added the secret ingredient. The one that can never be missing at my house. Read the recipe, and this trick will transform any plain pasta.

Ingredients
- 5.3 oz short pasta
- 3.5 oz scamorza cheese
- 2.8 oz cooked peas
- 1 leek
- 3 tbsps 100% almond paste
- 2 tbsps extra virgin olive oil
- to taste salt

Steps
Clean the leek by removing the larger leaves and finely chop the white part. In a shallow casserole, gently stew the leek with two tablespoons of oil and two tablespoons of water. When the leek is ready (it will take 4/5 minutes of cooking), add the peas, stir, and season with salt, then turn off the heat. Grate the scamorza cheese. Boil the pasta in plenty of salted water for the time indicated on the package. Drain it and pour it into the casserole with the leek and peas. Add the grated scamorza, almond paste, and mix well to distribute. Add grated parmesan to taste and mix. Transfer the pasta to a dish suitable for air fryer cooking, sprinkle with more parmesan, and let it gratin at 356°F for ten minutes or until a nice crust forms on the surface. If you prefer, you can gratin in a preheated oven at 356°F for 20 minutes.
Notes
To make the pasta creamy, I use 100% almond paste available online, but it is now easily found in almost all supermarkets. If you can’t find it or don’t like it, you can use béchamel which you can make at home or purchase ready-made.
