- 12 oz pasta (sedanini, penne, mezze penne, casarecce … whichever you prefer)
- 3 tbsp extra virgin olive oil
- 1 clove garlic (crushed)
- 1/2 onion
- 3.5 oz cooked ham (diced)
- 2 eggs
- chopped parsley (fresh)
- to taste chili powder
- Grana Padano shavings (or Parmigiano Reggiano)
- salt

Steps
HOW TO PREPARE PAN-FRIED PENNE
First, put a pot with plenty of water on the stove and bring to a boil. Once the water boils, add the pasta (I used penne) and cook it for at least 11 minutes (according to the package instructions).
Meanwhile, in a large pan, heat 3 tablespoons of extra virgin olive oil, add the crushed garlic, a pinch of chili (optional), and the finely chopped onion using a manual chopper (practical and quick) and let it golden, then add the diced ham and let it brown lightly.
Then, remove the garlic.
Once the pasta is cooked, drain it al dente and pour it into the pan with the sauce, mix and toss it.
In a dish, pour the eggs, the chili (to taste), the chopped parsley, a pinch of salt and pepper; beat with a fork and pour the mixture into the pan and mix well with the pasta.
Cut the Grana Padano (or Parmesan) into thin shavings, place them on the pasta and serve. Here are the Pan-Fried Penne ready. Enjoy your meal!

You can store the pasta in the refrigerator for 1 – 2 days, sealed in an airtight container.
Tips and Variations
For an even tastier and richer version, add diced smoked (or plain) scamorza cheese cut into cubes. Add it to the pasta in the pan at the end of preparation, with the heat off. Mix and serve with grated Parmesan and chopped parsley.
Instead of ham, you can also use sweet or smoked bacon, or raw ham or speck.
