Mozzarella Cutlets

Mozzarella Cutlets, easy, quick, and tasty. Ideal as an appetizer or a vegetarian main course for a quick dinner, especially when you have no idea what to prepare and maybe have some mozzarella about to expire.

The idea came about by chance and was very well received. I was immediately asked to make them again.

I recommend letting the mozzarella drain well before slicing and then patting them dry with a kitchen towel. If you’re in a hurry and don’t have much time, it would be ideal to use pizza mozzarella, the one in blocks, even though it loses a bit in flavor.

HOW TO PREPARE MOZZARELLA CUTLETS

  • First, drain the mozzarella in a colander, then pat them dry with a kitchen towel and cut them into slices about 5/8″ – 3/4″ thick.

  • Meanwhile, beat the eggs with salt and pepper in a dish. If you like, you can also add dried thyme or other herbs. At this point, dry the mozzarella slices well, gently place them in the beaten egg, then in the breadcrumbs and again in the egg and finally, in the breadcrumbs: make a double breading.

  • Put on the heat a pan with plenty of extra virgin olive oil (or olive oil) and heat it up. As soon as the oil is hot, fry the cutlets immediately on both sides, turning them gently only once per side.
