Today I want to share with you the recipe for these delicious savory lady’s kisses. We all know the classic chocolate ones, the Piedmontese treats that look so simple yet are so delicious. This is the savory version. They’re a tasty and easy finger food that you can also prepare in advance. Put them on a nice tray or a cutting board and watch them disappear.

Ingredients for 20 Savory Lady’s Kisses
If you don’t have almond and/or hazelnut flour, you can grind the same amount of nuts together into a powder.
- 3/4 cup all-purpose flour
- 1/2 cup hazelnut flour
- 1/2 cup almond flour
- 2/3 cup Grana Padano cheese, grated (or Parmesan)
- 5 2/3 tbsp butter (at room temperature)
- 4 tsp dry white wine
- salt
- black pepper

- 1 Baking tray
- 1 Food processor
Preparation of Savory Lady’s Kisses
In a bowl, place the almond flour, hazelnut flour, and all-purpose flour, and mix them with a small whisk.
Then add the softened butter in pieces, the grated cheese, and the white wine, and start kneading with your hands until you get a smooth, homogeneous dough. Of course, if you prefer, you can do all this with a mixer.
Form a dough ball, wrap it in plastic wrap, and let it rest in the refrigerator for about twenty minutes.
After the resting time, form 40 small balls, rolling them in the palm of your hands. It’s important that they are the same size because they will be paired; so weigh them: they should weigh 9/10 g each.
Place them gradually on a baking tray lined with parchment paper, keeping them slightly apart from each other. Then gently press them so that the base flattens.
Bake these discs in a preheated static oven at 300°F for about 20 minutes. After this time, turn off the oven, open it completely but leave the tray inside for another 20 minutes.
Once the balls have cooled down perfectly, you can proceed with their FILLING.
Of course, there are many creams you can use to make these savory lady’s kisses. I used a simple ham mousse (100 g to be precise), but a mortadella mousse or a tuna mousse or even a salmon mousse will work, as long as they are a bit dense. It’s also possible to simply mix some spreadable cheese with a few tablespoons of Genoese pesto or with black olive paté. You can also use other creamy cheeses like crescenza. In short, anything that your imagination suggests.
Once you’ve chosen the cream you want to use, place it on the flat side of one cookie and top it with the other, thus forming the classic lady’s kiss.
