HOW TO PREPARE PASTA WITH PESTO, GREEN BEANS, AND POTATOES
First, trim the green beans and wash them thoroughly under running water, then cut them into pieces (or in half – if they are smaller, they cook faster); peel the potatoes, wash them, and cut them into not too large cubes.
Meanwhile, put a pot full of salted water on the stove and bring to a boil; then, add the green beans and potatoes in pieces and let them cook for about 2 – 3 minutes. Then, add the pasta and continue cooking according to the times indicated on the package.
In the meantime, put the pesto in a pan (or a bowl), dilute it with a ladle of pasta cooking water and mix; as soon as the pasta is cooked, pour it directly into the pan with the pesto, mix well to combine everything.
Finally, the Pasta with Pesto, Green Beans, and Potatoes is ready. If you want, add a drizzle of extra virgin olive oil raw and serve. Enjoy your meal!
