  • Grate the orange zest into the bowl, add the sugar, and rub with your fingertips to release all the essential oils of the orange zest.

  • Add the eggs to the bowl and work with the electric whisks until you get a puffy and frothy mixture, working at maximum speed.

  • Add the liquor, cream, and milk and mix at low speed. Then add flour and baking powder and incorporate well, still at low speed.

  • Fry the mixture in plenty of hot oil, half a tablespoon at a time. Leave enough space in the pan because they swell a lot, and we have to turn them as soon as they start to brown. Keep the oil temperature around 350°F. When they are nicely golden, drain and dry them on absorbent paper, continue until the mixture is finished. Place the pancakes on the paper without overlapping them, because they are very soft.
