Ingredients
For 2 people
- 5.3 oz rice for salads
- 3.5 oz canned tuna in oil
- 15 cherry tomatoes (yellow and red)
- 15 olives (I use Taggiasca)
- 3.5 oz feta cheese (or Asiago or small mozzarella balls)
- as needed extra virgin olive oil
- salt
- dried oregano

To make the Rice Salad with cherry tomatoes, tuna, and feta, you will need:

Steps
First, cook the rice: put the rice in a saucepan, cover with cold water and bring to a boil, then count 10 minutes from the time it starts boiling and turn off the heat. In any case, follow the instructions on the package as cooking times may vary.
Once cooked, drain in a colander and cool quickly with running cold water, just for a moment, then set aside. Or, drain quickly in a colander and spread onto a clean kitchen towel, separate the grains, and let dry.
Meanwhile, wash the cherry tomatoes, pat them dry with a towel, cut them into quarters, and place them in a dish along with the olives (if you want, cut them into rings), season with extra virgin olive oil and oregano, and adjust salt.
At this point, cut the Feta (or Asiago) into cubes, place the rice on a serving dish, add the cherry tomatoes and olives, gently mix to incorporate the flavors, then add the cheese. Let cool in the refrigerator and serve.
