The parmesan carrots in an air fryer are a simple, tasty, and delightful side dish. Just a few steps, a few minutes, and they are ready to accompany meat or fish dishes, as well as vegetarian main courses. I prefer my parmesan carrots plain, but you can enhance them using spices and herbs of your choice: garlic powder and sweet or smoked paprika are a great match!

Ingredients
- 1.3 lbs carrots
- to taste salt
- 2 tbsps extra virgin olive oil
- 1 oz grated parmesan
- to taste oregano

Steps
Wash the carrots, trim the ends, and peel them, then cut them into pieces that are long but not too wide. Dip them in boiling water and cook for five minutes (no more, as they should remain crunchy). Drain them, transfer them to a bowl, and season with extra virgin olive oil, salt, and oregano. Mix well, then place them on the air fryer rack lined with the specific perforated parchment paper. Sprinkle the carrots with parmesan and cook at 300°F for 5 minutes or until the parmesan melts.

I use an oven-style air fryer, but the procedure is the same if you have a basket air fryer.
