Fennel and Cherry Tomatoes in a Skillet, tasty and delightful, perfect as a side dish but also as a vegetarian main course.

It’s the first time we plant fennel in summer. Normally, we plant them in autumn to have them all winter. This year we wanted to try the summer version too. The result? A very white, round, less fibrous, crunchy, and flavorful bulb.

Delicious eaten raw in salads, but also cooked in a skillet with cherry tomatoes: a great discovery.

Ingredients

  • 2 fennels (small)
  • 4 tablespoons extra virgin olive oil
  • 1/2 onion (shallot or scallion)
  • 1 clove garlic
  • chili pepper
  • 15 cherry tomatoes
  • 0.5 cup water
  • salt

Steps

  • First, clean the fennels. Remove the green part, the fronds (set them aside), and part of the base, not too much, practically flush, so that the leaves hold together.

  • Then, cut them in half, and again into quarters; if they are very large, cut them again. If they are thin, they will cook faster.

  • Meanwhile, in a large skillet heat 4 tablespoons of extra virgin olive oil, add the crushed clove of garlic, a pinch of chili pepper, and the onion, sliced finely, and let it turn golden. Add the fennels and let them cook, covered, for about 5 minutes on medium-low heat, turning them occasionally. If necessary, add a little water (3-4 tablespoons).

  • In the meantime, wash the cherry tomatoes and cut them in half, then add them to the skillet with the fennels; remove the garlic.

  • At this point, add 1/2 glass of water, adjust the salt, and let them cook, covered, for about 20 – 25 minutes. A little before the end of cooking, also add the fennel fronds. Here you have Fennel and Cherry Tomatoes in a Skillet ready. Enjoy your meal!
