Stuffed Chicken Roll

Ingredients

  • 21 oz thinly sliced chicken breast
  • 3.5 oz cooked ham
  • 5 oz sliced provola cheese
  • 4 medium eggs
  • 3 tbsps grated Parmesan cheese
  • 2 tbsps breadcrumbs
  • to taste salt
  • 4 tbsps extra virgin olive oil
  • 3.5 oz white wine

Steps

  • In a bowl, beat the eggs then add the grated Parmesan and breadcrumbs, mixing until you get a sort of soft cream.

    Place a sheet of parchment paper on the work surface and arrange the chicken breast slices on top in two rows, slightly overlapping them to form a rectangle. Season with salt. Spread the egg cream over the chicken slices, spreading it well but leaving an inch free all around. Stuff with the cooked ham and then with the cheese. Roll up tightly, helping yourself with the parchment paper, and tie the obtained roll with kitchen string or with the specific roast elastics.

    Transfer the roll into a casserole with oil and fresh herbs to taste (rosemary and sage), add the white wine, and cook in a preheated oven at 390 °F for 20 minutes, keeping it covered with a sheet of aluminum foil. After 20 minutes, uncover it and continue cooking for another 20 minutes. When ready, let it cool slightly, then slice and serve.
