Ingredients
- 8 slices chicken breast (thin)
- 6 slices prosciutto
- 10 leaves sage
- 2.8 oz sliced smoked cheese
- 0.5 cup white wine
- 3 tbsps extra virgin olive oil
- to taste salt
- to taste flour

Steps
Lay the chicken slices open on the work surface (if they are large you can divide them into 2/3 parts to obtain small bites). Dust the slices with a little flour on both sides. Place a sage leaf, a piece of prosciutto, and a piece of smoked cheese on each slice. Roll the chicken to form rolls and secure with a toothpick. Pour the oil into the casserole and arrange the rolls, season with salt and let them brown well on all sides. Deglaze with the white wine, cover and continue cooking on low heat until the wine has evaporated. Serve the saltimbocca hot.
