Just prepare it a few hours in advance, even the night before, to serve it well-marinated and flavorful. Eating raw cabbage allows you to preserve all the properties of this winter vegetable, and unlike the cooked version, it is more digestible, left to soak with all its seasoning. Just give it a good stir now and then, so the marination occurs evenly over time. If you’re in a hurry, you can season it the same way without letting it marinate; it will be delicious anyway, a fresh cabbage salad that can be enriched with apple, walnuts, and orange slices.

- 1/2 cabbage
- 2 orange juice
- 1/2 tsp honey
- to taste salt

Steps for Preparing Orange-Marinated Cabbage
Remove the old leaves from the cabbage. Cut it in half and then in half again, and start slicing it thinly on a cutting board with a large sharp knife.
Wash the cabbage in a colander, drain it well, and place it in a large bowl.
Prepare the orange juice with a citrus juicer, I used a couple for a big quarter of cabbage, so adjust a bit based on the quantity if you need to use a little more.
Season the cabbage with all the orange juice, add salt, oil, vinegar, pepper, oregano, and give it a good stir. Also, add a bit of honey that gives a great taste and stir again.
Give it a good stir every now and then and let it marinate for a few hours, so our cabbage salad will be delicious, but it’s also great to eat right away.
Drain the marination liquid before serving after a few hours of resting.
If there’s any left, it can be stored in the fridge. It can be prepared a day in advance.
