Whole Wheat Pasta with Porcini Mushrooms and Grana

Whole wheat pasta with porcini mushrooms and grana is exquisite.

I used frozen porcini mushrooms, just a handful is enough.
Since they are already cleaned and ready to use, and should be used while still frozen, preparation times are really reduced.

I finished with a handful of grana flakes.

You can finish with a grated aged cheese [like grana or parmesan] or in flakes, in small amounts to add flavor or use the full amount according to your dietary plan to transform the whole wheat pasta with porcini mushrooms into a one-dish meal that encompasses the characteristics of a balanced meal in a single course.

Whole Wheat Pasta with Porcini Mushrooms and Grana

Ingredients

  • 5 and 2/3 oz whole wheat macaroni
  • 1/2 shallot
  • 1 pinch garlic powder
  • 1 shot glass white wine
  • 2 and 3/4 oz porcini mushrooms (frozen)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste parsley (chopped)
  • 1 drizzle extra virgin olive oil (raw)
  • to taste grana padano (in flakes)

Preparation

  • Peel the shallot, remove the ends, and slice it into rings.

  • In a hot pan, brown a sprinkle of garlic powder.
    Add the shallot and let it soften for a few seconds.
    Deglaze with a shot glass of white wine.

  • Pour the frozen porcini mushrooms into the pan, stir, and sauté over high heat until fully defrosted, just a few minutes.

  • Add salt and grind the pepper with the heat off, then mix.

  • Cook the pasta, rinse it under running water, and drain.

  • Meanwhile, heat the mushrooms.

  • Add the pasta to the pan with the mushrooms and mix.

  • With the heat off, add parsley and a drizzle of raw olive oil and mix.

  • Plate.
    Distribute the grana in flakes.

  • Your whole wheat pasta with porcini mushrooms and grana is ready.

    Enjoy your meal!

  • I used a locally produced artisanal pasta, but any format will do, preferably whole wheat and bronze-cut, so the surface can nicely soak up the succulent sauce.

    Also try:
