Turkey Breast with Gravy, Sweet Potato, and Spinach

The turkey breast with gravy, sweet potato, and spinach is a tasty and rich main course designed for those who want to celebrate Thanksgiving with the traditional turkey dish without spending much time in the kitchen, easily and quickly. For the recipe, I thought of cooking slices of turkey breast in a pan, accompanied by a side of spinach and the essential sweet potato (or batata), in this case with orange flesh, cooked in an air fryer. All accompanied by the typical gravy sauce made from flour, butter, and meat or vegetable broth, previously prepared or, if you don’t have the ingredients and time like me, you can use ready-made broth cubes.

Ingredients

  • 7 oz sweet potato (or batata) (raw, with skin)
  • 7 oz spinach
  • 3.5 oz turkey breast
  • to taste smoked paprika (optional, or another type of paprika)
  • to taste extra virgin olive oil
  • to taste fine salt
  • to taste black pepper
  • 1/2 glass water (approximately)
  • 0.4 oz butter
  • 0.2 oz all-purpose flour
  • 1/2 broth cube (meat or vegetable)

Steps

To prepare the turkey breast with gravy, sweet potato, and spinach…

  • First, peel and cut the sweet potato into sticks about 1/4 inch or 1/2 inch thick, or according to your taste.

  • Place it in a bowl and season with extra virgin olive oil, smoked paprika, salt, and pepper, then mix it, and pour it into the air fryer basket and cook for 20/25 minutes at 392°F, stirring occasionally.

  • In a pan, pour the extra virgin olive oil, heat it, and lay down the slices of turkey breast. Cook them for about 5 minutes on high heat, turning them on each side until golden, then salt and pepper.

  • In another pan, pour the extra virgin olive oil, heat it, and then add the fresh spinach with a little water. Cover them with a lid and let them wilt. Afterwards, remove the lid and let the water evaporate until dry. Salt and pepper.

  • Finally, while almost all the ingredients are cooking or cooked, keep them warm and prepare the sauce.

  • In a small pot, heat the water and when it is very hot, dissolve 1/2 meat or vegetable broth cube in it and stir.

  • In the other small pot, melt the butter, add the flour, stirring with the whisk, then pour in a few tablespoons of hot broth and stir again with the whisk until you get a smooth and homogeneous sauce. If too liquid, add some flour, if too thick, add some broth.

  • Now you can serve the turkey breast with gravy sauce with a side of sweet potato and hot spinach.
