Light Basil and Sun-Dried Tomato Pesto

The light basil and sun-dried tomato pesto is a delicious sauce.
To avoid making a pesto that’s overly caloric, the amounts of sun-dried tomatoes and oil must be reduced. Additionally, ensure store-bought sun-dried tomatoes do not contain sugar.

I used Sicilian-style sun-dried tomatoes made at home, frozen without oil so they can be used without needing to be drained.

The result is fresh and flavorful.
It is prepared in just a few minutes and requires no cooking.

Versatile:
• sauce for bruschetta and crostini;
• sauce for pasta;
• flavor enhancer for meat, fish, cheese, egg, or legume dishes [example hummus].

I used my pesto to season two delicious dishes of legume pasta and whole grain pasta mix, finger-licking good.
Finish with almonds [sliced or chopped] for an even tastier result.

Ingredients

  • 0.7 oz basil (about 30 large leaves)
  • 6 sun-dried tomatoes (well-drained if in oil)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 2 tsp extra virgin olive oil (raw)
  • 2 tbsp almonds (sliced or chopped)

Tools

  • Food Processor or Blender

Preparation

  • Select and wash the basil leaves.
    Drain them in a colander.
    Dry them on a sheet of kitchen paper towel.

    Place the sun-dried tomatoes in the blender and chop.
    Add the basil and chop.
    ! When preparing pesto, the blender should be pulsed rather than run continuously, and the blades should not overheat.

    Add a pinch of salt and a pinch of pepper, pour in the oil, and blend to mix everything well.

    The mixture remains rather coarse.
    If you find it necessary, respecting the proportions indicated in your meal plan, you can add a bit more oil.

    Your light basil and sun-dried tomato pesto is ready.

    The amount of almonds should be reduced: consider that 25 g [about 8] covers the recommended daily portion.

  • If there’s any leftover, divide the pesto into ice cube trays and store it in the freezer.
