Rustic and Quick Cherry Tomato Sauce

The rustic and quick cherry tomato sauce is a real lifesaver when I don’t have homemade tomato sauce.

It is prepared in just a few minutes!

Tasty and versatile, I use it:
• to season pasta, simply;
• as a base for meat, fish, and vegetable sauces;
• in the preparation of appetizers, first courses, and main courses;
• as a side dish;
• on bruschetta and pizza.

I use cluster tomatoes [cherry, datterino, pixel]; my uncle grows them in a greenhouse so, with great fortune and certainty of their origin, I almost always have a full pantry.
I separate them by ripeness, allocating them among salads, sauces, and various preparations.

I prepare the sauce when needed and/or to avoid wasting the ripest tomatoes; I make it fresh in small quantities, but if you decide to make it in abundance, you can store it in the refrigerator in an airtight jar, taking care to take it out about an hour before consuming it so that it resumes the right consistency.

For a more pleasant result, I usually remove the skins.
If you don’t like such a rustic sauce, besides removing the skins, you can pass it through a sieve to also remove the seeds.

Ingredients

  • 12 berries cherry tomatoes (pixel)
  • 1 pinch garlic powder
  • 1 pinch salt
  • to taste basil (whole leaves or chopped)
  • 1 drizzle extra virgin olive oil (raw)

Tools

  • 1 Wok

Preparation

  • Select the ripest berries.
    Wash the tomatoes thoroughly.
    Remove the stem part if you think it’s necessary.
    Cut each berry vertically into four wedges.

  • In a hot pan/wok, brown a sprinkle of garlic powder.

    Pour the tomatoes into the pan and sauté for about 2 minutes over high heat, stirring repeatedly so they release their liquid.

  • With the heat off, remove the skins using kitchen tongs [optional].
    If you don’t like such a rustic sauce, besides removing the skins, you can pass it through a sieve to also remove the seeds.

  • If the tomatoes have released too much water and you need a thicker sauce, continue cooking until the desired consistency is reached.

    Add the salt and basil, whole leaves or chopped.

    Your rustic and quick cherry tomato sauce is ready.

  • You can flavor your rustic and quick cherry tomato sauce with your preferred herbs and spices: oregano or marjoram, mixed peppercorns or red chili flakes, etc.

    Add a drizzle of raw oil at the end of the preparation.
