The light cabbage rolls are delicate bundles filled with meat and vegetables, a simple and tasty second course perfect for the winter season. For the filling, I chose zucchini, carrots, and green beans, but you can substitute them as you like depending on the season. You can use the vegetables you have in the fridge, some leftover cooked vegetables, or even boiled and mashed potatoes. Light because in this version I greatly reduced the dressings, but if you like the idea and want to make them richer, feel free to increase the amount of oil and let them brown a little in the pan before going to the air fryer or oven to finish cooking. Ingredients
- 8 leaves cabbage
- 1 cup mixed vegetables, steamed or boiled (zucchini, green beans, carrots)
- 1/2 onion
- 3.5 oz ground veal
- 2 tsps extra virgin olive oil

Steps
Remove the outer or damaged leaves from the cabbage head and take eight larger leaves. Wash them well and blanch them in boiling water for a couple of minutes, then pass them under cold water to halt cooking, pat them dry with paper towels to remove water, and set aside. Cut the cooked vegetables into strips and thinly slice the onion. Heat the oil in a low-sided casserole and add the onion and ground meat. Let it brown well, stirring until the meat releases its water. Cook the meat thoroughly (it will take about 10 minutes) and then add the vegetables. Let it season. Adjust the salt. Turn off the heat and let it cool.
Prepare the rolls: place a spoonful of the meat and vegetable mixture in the center of the cabbage leaf and roll it up to form a bundle, folding the edges inward so the filling doesn’t escape. Transfer the bundles to a baking sheet, optionally add a little more oil on top, and bake at 356 °F in an air fryer or preheated oven for about 20 minutes.
