In the fall, grapes are abundant, and they can be used in many recipes 😉
Today I went to the fruit vendor, and every time I go there, besides buying fruits and vegetables, he often gives me what is no longer in good condition at that moment.
This time he gave me quite a lot of grapes: I’ll enjoy some as is and use the rest for recipes.
And so I started making a tart 😀
In this tart, I didn’t use regular flour but spelt flour, and I filled it with a cream made of Greek yogurt, cream, and powdered sugar. For the grapes, I used seedless ones.
It’s a tart that can be enjoyed not only for breakfast and snack but also at other times of the day.
The base is made with a shortcrust pastry without butter and eggs.

Ingredients for the Spelt Tart with Grapes
- 1 3/4 cups spelt flour
- 1/4 cup raw cane sugar
- 3 1/2 tbsp vegetable oil
- 3 1/2 tbsp water (cold)
- 7 oz white grapes (seedless)
- 3.5 oz Greek yogurt
- 3.5 tbsp heavy cream
- 2 1/2 tbsp powdered sugar
Steps for the Spelt Tart with Grapes
Prepare the shortcrust pastry:
In a bowl, pour the spelt flour and raw cane sugar.
Gradually add the oil and water.
Mix with a spoon, then use your hands.
Move to the table, working the dough with your hands to form a ball.
Wrap it in plastic wrap and store it in the fridge for at least an hour.
Take the ball out of the fridge, roll it out in a pan lined with parchment paper, and prick the surface with a fork.
Preheat the oven to 356°F (180°C) in static mode and bake the dough for about 20 minutes.
Let it cool.
Prepare the filling:
In a bowl, pour the Greek yogurt, heavy cream, and powdered sugar.
Mix the mixture with a spoon and spread it over the cooled shortcrust pastry, leveling it well with a spoon.
Add the grapes in a circular pattern.
The spelt tart with grapes is ready to be enjoyed.
