Rame di Napoli easy and quick recipe to make soft cookies with chocolate glaze that literally make you dream bite after bite. Rame di Napoli are sweets from the city of Catania, prepared for the Day of the Dead. To commemorate beloved deceased ones, it is customary to prepare special foods to remember them fondly, and Rame di Napoli are one of them, like crispelle in Calabria, which are prepared both sweet and savory, with potatoes or without, just like pasta and chickpeas, and many others. But why this strange name Rame di Napoli if they are Catanese sweets? It seems they were created after the introduction of a new coin, forged in copper, introduced with the union of the Kingdom of Naples and Sicily, hence the Catanese Rame di Napoli.
I have seen this sweet many times, but I had never tasted it. Finally, I decided to make it on a boring afternoon, sad and listless. I thought it was better to do something productive, and then I must say, I found my usual good mood in the kitchen. I really needed the Rame, and when I tasted them, first freshly baked, in their simplicity, and then glazed, what can I say, I fell in love. I think it has become my favorite chocolate sweet, easy to make and incredibly delightful. Then when my husband tasted them, the first thing he said was how good they were, what liquor did you use? They are so aromatic. And my answer was, you know, no liquor. See how good… and well, we’ve already finished them; I will have to make them again soon. I recommend doubling the amounts if you are many; a couple per person disappear quickly, and you won’t believe it, but they are also great for dipping in milk, I just had to try eating them for breakfast dipped in milk, a divine delight… are you still there? Go and make them too, they are amazing. Oh, I forgot, I made half as the classic recipe with orange jam, the other half with apricot jam, it almost seems like eating a sacher torte, with this whipped shortcrust the cookie is very soft. Ingredients for Catanese Rame di Napoli Day of the Dead Sweets
- 2 cups all-purpose flour
- 2/3 cup milk
- 1/2 cup sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup butter
- 2 tbsp wildflower honey (1 heaping teaspoon)
- 1/2 teaspoon cinnamon
- 1/3 teaspoon cloves
- to taste grated orange zest
- 2 tsp baking ammonia
- 5 oz dark chocolate
- 2 tbsp butter
- to taste pistachio slivers
- to taste orange marmalade (or apricot)

Steps to Prepare Rame di Napoli
In a large bowl, put the sugar and add the melted butter, honey, mix, then add cocoa, orange zest, and the spices, cinnamon and cloves. Mix to get a creamy mixture.
At this point, add the baking ammonia and milk, in two batches, to achieve a smooth cream.
Finally, add the flour, also in two batches, to create a smooth, lump-free mixture. The final mixture will be very soft, but it should be so. Transfer it into a pastry bag.
Shape our Rame di Napoli by creating about 10 or more swirls of whipped shortcrust on a baking sheet lined with parchment paper, leaving space between them. If you prefer, you can work with a spoon and wet hands to shape slightly flattened balls to place on the tray. With wet hands, the dough won’t stick.
Bake in a preheated static oven at 350°F (180°C) for about 15 minutes. Remove from oven, let cool a bit before moving them as they are very soft. Then, slowly detach them and place on a rack to cool completely.
When cooled, coat with glaze. Brush with a little orange or apricot marmalade heated slightly to spread better, then top with a generous teaspoon of melted chocolate, prepared in a bain-marie or microwave with butter. It’s easier to spread the chocolate with an ice cream spatula on our cookies, and finally, add some pistachio slivers on top. Let cool completely on a rack before enjoying our homemade spicy and chocolatey cookies.
