- 2 cups all-purpose flour (10 tablespoons)
- 1 cup sugar (10 tablespoons)
- 3 medium eggs
- 1 packet baking powder (16 g)
- 1 cup sweetened whipping cream (or fresh)
- 1/4 cup unsweetened cocoa powder

Steps to prepare the Mother-in-law’s Cocoa Cake
Butter and flour the 8-inch pan.
Preheat the oven to 350°F, place the rack in the middle of the oven.
Using electric whisks, beat the eggs for 30 seconds; they can be cold from the fridge, as well as the cream.
Add the sugar to the eggs and beat for a couple of minutes.
Once you have a light mixture, add the cream and beat for another minute.
Then add the sifted cocoa, flour, and baking powder all together, and mix with the whisks at medium speed just enough to incorporate all the powders.
Transfer the mixture into the baking pan and bake immediately, after leveling the mixture in the pan with a spatula.
Bake the cake for about 45 minutes; perform the toothpick test, if it comes out dry, you can take out our delicious mother-in-law’s cake.
Let it rest for 10 minutes, then place it on a serving tray and sprinkle with plenty of powdered sugar.
This cake is delicious on its own, or also filled, and can be slightly moistened. Great with a teaspoon of Nutella on the slices or some jam.
