Eggplant Rolls with Rice

Eggplant rolls with rice, an easy and delicious recipe. It’s a perfect dish for the beautiful season, a summer lunch or a tasty dinner, they’re a burst of flavor and the melty center will make you fall in love! Basically, it’s eggplants seasoned and baked in the oven and then stuffed with rice in meat sauce. In the center, I add a piece of melty cheese, but if you prefer, you can also simply add black or green olives, or grilled and diced vegetables like zucchini or peppers.

Ingredients

  • 2 eggplants
  • 1 1/4 cups rice (with meat sauce)
  • 1/3 cup Parmesan cheese
  • 3.5 oz mozzarella
  • 2.8 oz scamorza

How to make eggplant rolls with rice

  • First, you will need to slice the eggplants not too thick, then place them on a baking tray lined with parchment paper. Make slight cross cuts on top of the slices.

  • Bake in a static oven for 15 minutes at 374°F. Alternatively, if you don’t want to turn on the oven, cook them in a non-stick pan.

  • After the cooking time, stuff each eggplant with the previously cooked rice seasoned with the meat sauce and cheese, then roll to form a roll.

  • Transfer all the rolls into a baking dish, top with mozzarella and Parmesan cheese, and bake for 10 minutes at 374°F. Remove from the oven, serve, and enjoy!

Storage and Tips for Eggplant Rolls with Rice

They can be stored in the refrigerator covered with plastic wrap for up to two days. You can season the rice also with simple basil sauce. You can use either fresh mozzarella or pizza mozzarella, to add an extra touch of flavor you can replace it with smoked scamorza cheese. For a more delicate and creamy flavor, add Philadelphia or Robiola to the rice.
