Ingredients

  • 1/2 cabbage
  • 12 oz cooked, boiled chickpeas

Steps

Making the Cabbage and Chickpea Soup is simple.

  • First, clean the cabbage: remove the most damaged outer leaves, then wash it, pat it dry with kitchen paper, and on a cutting board, slice it into strips.

  • Next, peel the onion and chop it with the chopper along with the rosemary needles; place the chickpeas in a plate and mash half of them with a fork.

  • Then, heat 3 tablespoons of extra virgin olive oil in a large pot, and sauté the chopped onion, rosemary, and a whole clove of garlic over low heat.

  • Then, remove the garlic and add the sliced cabbage, let it flavor for about a minute while stirring, then add the tomato sauce; cover with a lid and cook on low heat for 20 minutes.

  • At this point, add the chickpeas, cover with the hot broth, and continue cooking over medium-low heat for about 30 minutes.

  • Near the end of the cooking, adjust with salt and serve hot, accompanied by toasted bread croutons grilled for 2 minutes.
