Fried donuts, soft, fragrant, and delicious, without potatoes in the dough, they stay soft for a long time, but you won’t have the chance to find out, because they will literally disappear. 😃 In fact, I didn’t even have time to coat them with sugar before they vanished from the plate.
Perfect for Carnival, but also for many other occasions: a birthday party, a party, a snack, or even for breakfast… they are so good that it’s really hard to resist.

Ingredients
- 2 1/2 cups Manitoba flour
- 3/4 cup flour
- 1/2 packet dry brewer's yeast (or 1/2 cube of fresh brewer's yeast)
- 2 eggs (at room temperature)
- 1/2 cup milk (at room temperature)
- 1/3 cup granulated sugar (+ 2 teaspoons to activate the yeast)
- 1/3 cup butter (at room temperature)
- 1 lemon zest (grated)

Steps
First, prepare all the ingredients: remember to take the butter out of the fridge at least 1 hour before starting.
Pour the two flours into a bowl, add the brewer’s yeast along with two teaspoons of sugar and mix with a fork.
Now add the eggs, the softened butter in pieces, the lemon zest, the sugar, and finally the milk; mix well.
Transfer the dough onto a work surface and continue to knead by hand, compact it, and let it rest in a bowl for at least 2 hours, until it doubles in size. See note 1 in Tips.
Take the dough back, flatten it with your hands, and roll it out with a rolling pin to a thickness of about 1/2 – 3/4 inch.
Now, make the donuts using a 3 1/2 inch round cutter and the tip of a piping bag.
Then, place the donuts on small sheets of parchment paper directly on a baking tray
and let them rest, covered, for about 30 minutes. Here they are beautifully risen, ready for cooking in the pan.
At this point, fry the donuts in hot oil (about 340°F) until golden, turning them occasionally.
As soon as they are golden, toss them while still hot in granulated sugar so they absorb the sugar well.

Storage
You can store Fried Donuts in an airtight container at room temperature for 1-2 days, assuming they last that long. If you have any left, I recommend warming them up for a few seconds in the microwave to make them warm.
Tips
Notes:
1) As soon as you finish kneading, when you need to let the dough rise for at least 2 hours, you can also place it in the fridge overnight, covered with plastic wrap. This way, the next day, just take it out of the fridge, let it sit at room temperature for at least half an hour, after which it will be ready to use.
2) As soon as the donuts are cooked, toss them in granulated sugar while still hot so they absorb the sugar well.
3) If you prefer, you can substitute granulated sugar with powdered sugar. However, we like them better with granulated sugar.
4) You can use the fried donut recipe to make classic American donuts, famous for the Homer Simpson TV series: just cover the surface with glazes and colorful sprinkles.
5) You can also bake the donuts in the oven at 355°F, in static mode, for about 15-20 minutes. Be careful with cooking: they should not color too much but should be soft and golden.
6) Tips for cooking. Prepare a deep pan, pour in plenty of oil, and heat it over high heat, bringing it to a temperature of about 340-355°F, not higher, or the donuts will cook quickly on the outside but not internally.
You can check the oil temperature with a kitchen thermometer like this, but if you don’t have one, test with a toothpick: if bubbles form around it when dipped in, it means it’s ready.
