Blackberry Cake with Ricotta and Lemon 🍋
A delicious cake made with fresh blackberries, ricotta, and lemon 🍋 This year I “discovered” blackberries 😂 and quickly got to work 😁 A refreshing dessert to perfectly end the meal or enjoy as an afternoon snack, or why not, as a cake to celebrate a special occasion! The combination of blackberries, lemon, and ricotta is really PERFECT, I must say I liked it a lot!

Ingredients for the Blackberry Cake with Ricotta and Lemon:
- 7 oz blackberries
- 3 tablespoons sugar
- Half lemon (Juice)
- 1 cup ricotta
- 1/2 cup sugar
- 3/5 cup whipped cream
- lemon zest
- lemon flavor
- 2 1/4 tablespoons lemon marmalade
- lemon juice
- sugar syrup
- 3 slices sponge cake (Discs)
- 3/5 whipped cream
- blackberries (Fresh)
Steps
For the preparation of the blackberry, ricotta, and lemon cake watch the video HERE.
In a saucepan, combine blackberries, sugar, lemon juice, and cook for about 10 minutes, slightly mashing the blackberries during cooking.
Let cool.
Cream preparation:
Mix ricotta, lemon flavor, sugar, marmalade, and grated lemon zest
Mix well. Add whipped cream and blend.
Combine lemon juice with syrup.
Moisten the first sponge cake disc. Add a layer of cream and level. Top with some of the prepared blackberry mixture.
Add the second sponge cake disc, moisten, and add another layer of cream, level.
Top with fresh blackberries. Add the third sponge cake disc, moisten. Clean the edge of the plate if needed.
Combine the remaining blackberry mixture with the cream and mix slightly. Use a piping bag without a nozzle to add a layer on top of the cake. Also cover the sides.
Decorate as desired.
