Spinach Salad with Walnuts

The spinach salad with walnuts is a light and tasty side dish.
It’s a salad of cooked spinach or rather wilted in a pan without oil, which can also be prepared with raw spinach using baby spinach.

Lively with the addition of red pepper [optional].
Delicious with a crunchy note.

It has rightfully entered among our favorite seasonal salads!

Spinach Salad with Walnuts

Ingredients

  • spinach (or baby spinach)
  • 1 pinch garlic powder
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste lemon juice
  • 1 drizzle extra virgin olive oil (raw)
  • 1 pinch red pepper (coarsely chopped)
  • walnuts (a handful)

Preparation

  • If the spinach is very dirty with soil:
    • place them in the sink and cover with water;
    • shake the leaves to facilitate cleaning;
    • empty the sink.

    If the spinach is quite clean [for example, loose-leaf spinach sold in bags that are already sorted and cleaned], you can proceed directly to the next step:
    • rinse the spinach under running water to remove any remaining soil and sand.

    Move them to a colander and let them drain.
    The residual water plus the water they release during cooking will allow you to sauté them without oil and without sticking to the bottom of the pan.

    Chop the spinach.

    In a hot pan, heat a sprinkle of garlic powder.
    Add the spinach to the pan, over high heat for a few minutes, and stir repeatedly until the desired consistency is reached: more raw and crunchy or more cooked and wilted, according to taste.

    Season with:
    • a pinch of salt;
    • a pinch of pepper;
    drizzle with lemon juice and a drizzle of oil, add coarsely chopped red pepper [optional].

    Prepare a handful of walnuts and chop them coarsely with a knife.
    Distribute the walnuts over the spinach.

    Plate the dish.

    Your spinach salad with walnuts is ready.
