Stuffed Tomatoes with Rice and Mozzarella in Air Fryer
A summer recipe revisited with mozzarella and cooked in an air fryer. In summer, I personally use the oven very little and only if it’s really necessary 😂 since stuffed tomatoes are very popular at my house, I tried making them in the air fryer and I must say they turned out very well. Then I enriched my classic recipe of stuffed tomatoes with rice by adding mozzarella inside, and I must say I liked them very much!

Ingredients for Stuffed Tomatoes with Rice and Mozzarella in Air Fryer:
- 4 tomatoes
- 4 tablespoons rice
- 1 mozzarella
- extra virgin olive oil
- salt
- garlic
- breadcrumbs
Steps
The preparation of stuffed tomatoes with rice and mozzarella in air fryer is very simple and quick, watch the video HERE.
First, wash the tomatoes well, then cut off the tops, remove the hard green part, and then hollow out the inside.
Blend the obtained pulp. Add the previously rinsed rice, salt, a bit of garlic powder, and mix.
Let it rest for about 30 minutes. Then fill the hollowed tomatoes about halfway and add a piece of mozzarella inside each. Cover with the remaining rice.
Add some breadcrumbs on top, a few more pieces of mozzarella, and a drizzle of oil. Cook in the air fryer at 356°F for about 20 min.
