Lamb’s Lettuce and Arugula Salad with Apple

Today I suggest a delicious lamb’s lettuce and arugula salad with apple.

Lamb’s lettuce, or corn salad, is characterized by a soft texture and a delicate flavor.

Arugula can be of two types: wild and cultivated; we prefer the cultivated one with smaller, tender leaves and a less pungent taste.

Apples, present in our dietary plan, fall into the second group for sugar content in fruits.
I suggest choosing a crunchy and not mealy apple.
In cases of hyperglycemia, prediabetes, and type 2 diabetes, it’s important to consider the portion of fruit, in this case apples, and the entire meal it is part of.

A sort of hybrid between salad and fruit salad to be served as a side dish or to close the meal, or to be eaten as a delicious snack.

Lamb's Lettuce and Arugula Salad with Apple

Ingredients

  • to taste lamb's lettuce (or corn salad)
  • to taste arugula
  • 1/2 apple (crunchy)
  • to taste lemon juice
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 1 drizzle extra virgin olive oil (raw)

Preparation

  • Select and wash the lamb’s lettuce leaves and the arugula leaves.
    Drain them in a colander.
    Dry them on a sheet of paper towel.

  • Wash the apple thoroughly, slice it thinly, and drizzle with lemon juice.

  • Place in a bowl:
    • lamb’s lettuce;
    • arugula;
    • apple;
    season with a pinch of salt and grind the pepper.

  • Add a drizzle of raw oil and mix.

  • Your lamb’s lettuce and arugula salad with apple is ready.

  • For the leafy or small leafy part, you have a wide choice among the many types of:
    • lettuce, arugula, lamb’s lettuce or corn salad, and mixed greens.

    You can replace the apple with other fruits, preparing a sort of hybrid between salad and fruit salad, to be served as a side dish or to close the meal, or to be eaten as a delicious snack.
    Consider the sugar content in fruits.

  • The combination with low-fat yogurt and/or with shelled nuts slows down the rapid absorption of fruit sugars.


    Complete your salad with fruit with:
    Greek yogurt sauce or dressing or Greek yogurt;
    • shelled nuts [almonds, hazelnuts, walnuts];
    • seeds [chia, sunflower, flax, poppy, sesame, pumpkin].
