Storage

You can store the Tiramisu Cake in the refrigerator for up to 2 days in an airtight container.

Tips

– For an excellent cream result, the eggs must be at room temperature before being whisked.

– Take the mascarpone out of the fridge at least half an hour before using it. When pouring it, remove any liquid that might be in the package.

– Do not soak the pavesini in the coffee for too long; the movement should be quick. This way, you will prevent them from becoming too soggy or falling apart.

– Decorate the Tiramisu Cake with the cookies just a few minutes before serving.

– Prepare the tiramisu the day before: it will be even better!

Egg Pasteurization

Put 25 g of water and the sugar in a saucepan and bring to a boil (it must reach a temperature of 250°F), stirring well to dissolve the sugar properly.

In a bowl, whisk the egg yolks and gradually add the hot sugar and water syrup as soon as it is ready. You should obtain a light and foamy mixture. Then proceed as usual.
