Tasty baked sausages with vegetables, an incredibly easy recipe to prepare last minute for lunch or dinner, perfect for any occasion, great as a main course for 2 people, or 4 by doubling the amount of vegetables. I had bought some herb-flavored sausages, they caught my attention because they were described as herb-flavored and so I couldn’t miss them, to enhance their flavor I thought of cooking them with some vegetables, I only had one zucchini so I added 2 potatoes, I must say the choice was spot on, it turned out to be a nice complete dish, and the vegetables came out delicious, thanks to the juices released by the sausage.

  • 1 roll sausages (spiced)
  • 2 potatoes
  • 1 zucchini
  • 1 red Tropea onion
  • to taste dried oregano
  • 3 teaspoons breadcrumbs
  • to taste salt

  • to taste yellow and red cherry tomatoes

Steps to Prepare Baked Sausages with Vegetables

  • Peel and slice 2 potatoes into rounds, not too thick, and wash them, place them in a bowl.

  • Slice a zucchini and an onion and add them to the potatoes.

  • Season with oregano, salt, and oil, and mix. Add the breadcrumbs and mix well.

  • Place the sausage in a baking tray, spread it out and distribute the vegetables evenly in between, since there was some seasoning left, I also added a few cherry tomatoes cut in half.

  • Bake in a preheated ventilated oven at 392°F (200°C) for about 30 minutes. Excellent to enjoy right out of the oven, a very tasty dish with flavorful vegetables cooked with spiced, herb-flavored sausages.
