Salad of Lampascioni or Wild Calabrian Onions

The lampascioni or wild onions are edible bulbs with a reddish color and a bitter taste.

I knew them as “cipudduzzi calabrisi” then, while dealing with the photographic herbarium of Systematic Botany, I discovered that they are called lampascioni or lampagioni and that despite the “Calabrian” identifier they are cultivated and spread in various regions of southern Italy: Apulia and Basilicata in particular.
They are available on the market from January to March.

They have a low calorie intake.

For traditional recipes, I turn to home help: my mother, who explains how to boil them to prepare a tasty salad of lampascioni or wild Calabrian onions.

Salad of Lampascioni or Wild Calabrian Onions

Ingredients

  • 9 oz lampascioni (or wild onions)
  • as needed water
  • as needed lemon juice
  • as needed water
  • 1 pinch salt
  • 1 pinch red chili pepper (coarsely chopped)
  • as needed parsley (chopped)
  • 1 drizzle extra virgin olive oil (raw)
  • as needed lemon juice
  • as needed citron

Preparation

  • Lampascioni or Wild Calabrian Onions
  • Clean the lampascioni from roots and soil residues.

    Wash them thoroughly.

  • Prepare a container and soak the bulbs for fifteen minutes in water and lemon juice.

  • Incise the base of the bulbs with two cross cuts.

    At this point:
    • put them in a pot with cold water and wait for the water to boil;
    • let them cook for about 5 minutes;
    • drain and rinse them.

    Repeat the process three times so that the bulbs lose some bitterness during cooking.

  • Your lampascioni or wild onions are ready.

  • Season them with:
    • salt;
    • coarsely chopped red chili pepper;
    • parsley;
    • extra virgin olive oil.
    If you like, you can add lemon juice only at the moment of consumption.

  • Your salad of lampascioni or wild Calabrian onions is ready.

    Enjoy your meal!

  • In Sicily, it is customary to add slices of citron, in dialect u pirettu.
