It is variously known as Turkish salami, Viking salami, or English salami.
This is my version: a light chocolate salami without the addition of milk, butter, or eggs.
An easy and quick no-bake recipe: just boil the water and melt the chocolate, yet super delicious!
Light chocolate salami:
– without butter for a hyperglycemia issue;
– without milk and without eggs for personal taste.
The official taster enjoyed it a lot and exclaimed: “it’s like from a pastry shop”!
The chocolate salami is a perfect dessert for any occasion and suitable for all holidays: Carnival, Valentine’s Day, Day of the Dead and Halloween, Christmas, New Year’s Eve and Epiphany, Easter especially if you have chocolate eggs to use up.
With the same mixture, you can assemble any shape: cookies, nougats, and light chocolate truffles.

Ingredients
- 7 oz wholemeal dry biscuits (ORO Saiwa Fibrattiva)
- 1 tbsp unsweetened cocoa powder
- 1 pinch ground cinnamon
- 1 pinch dried red chili pepper (finely chopped [optional])
- 1/2 vial rum flavor
- 2 fl oz water (boiling)
- 7 oz dark chocolate (extra)
- 2 tbsp sunflower oil
- 1 pinch erythritol (powdered or powdered sugar)

Preparation
I used wholemeal dry biscuits rich in fiber: ORO Saiwa Fibrattiva, usually characterized by giving good glycemic responses – the rule of testing on oneself always applies.
* in case of allergies and food intolerances, replace with suitable biscuits.Close the biscuits inside a freezer bag and crush them with a rolling pin until you get the desired size.
Break any pieces that remain too large.Pour the biscuits into a bowl.
Add to the biscuits:
– the unsweetened cocoa powder;
– a pinch of cinnamon;
– a pinch of finely chopped dried red chili pepper [optional] in Modica chocolate style;
– 1/2 vial of rum flavor;
and mix to distribute the ingredients well.In a saucepan, bring 50 ml (2 fl oz) of water to a boil, which you will use later.
Melt the dark chocolate in a double boiler or in a non-stick pan over very low heat, stirring with a silicone spatula.
Add the oil to the melted chocolate and incorporate.Pour into the bowl with the biscuits:
– the melted dark chocolate mixed with oil;
– the 50 ml (2 fl oz) of boiling water;
and mix carefully until the mixture is homogeneous.Prepare a sheet of parchment paper and a sheet of aluminum foil large enough to wrap the chocolate and biscuit mixture.
Transfer the mixture to the center of the parchment paper and shape it – compacting it well – into the cylindrical shape of a salami.
Wrap the chocolate salami in the parchment paper sheet and close the edges like candy.
Further wrap in the aluminum foil.Place the chocolate salami in the freezer for at least 2 hours to set.
After at least 2 hours, remove the chocolate salami from the freezer.
Gently open the aluminum foil and parchment paper.
Finish with a dusting of powdered erythritol – zero calories – or powdered sugar and wrap with kitchen string to make the appearance of the chocolate salami more realistic.
Your light chocolate salami without the addition of butter, milk, or eggs is ready.

Storage, Tips, and Variations
You can customize your chocolate salami with:
– flavors – vanilla or grated orange zest – and spices to taste;
– whole or chopped nuts – almonds, hazelnuts, pine nuts, pistachios.
Even if you use dark chocolate, it is still a source of fat, so to prepare a light chocolate salami: oil and other fats like nuts should be used sparingly.

You can store the chocolate salami in the fridge for a few days wrapped in an inner sheet of parchment paper and an outer sheet of aluminum foil.
If you think you won’t consume it soon:
– remove the chocolate salami from the freezer;
– slice it;
– wrap the slices in an aluminum foil sheet and place them back in the freezer;
so you can easily retrieve a single slice.
