This is my version: a light chocolate salami without the addition of milk, butter, or eggs.
An easy and quick no-bake recipe: you just need to boil water and melt the chocolate, yet it’s super tasty!
Light Chocolate Salami:
– without butter for hyperglycemia concerns;

The official taster really enjoyed it and exclaimed: “It’s like a patisserie”!
Chocolate salami is a perfect dessert for any occasion and suitable for all holidays: Carnival, Valentine’s Day, Day of the Dead and Halloween, Christmas, New Year’s Eve and Epiphany, Easter, especially if you have chocolate from eggs to use up.
With the same mixture, you can assemble any shape: cookies, nougats, and light chocolate truffles.

Ingredients
- 7 oz wholemeal dry biscuits (ORO Saiwa Fibrattiva)
- 2 tbsp unsweetened cocoa powder
- 1 pinch cinnamon powder
- 1 pinch dried red chili pepper (finely chopped, optional)
- 1/2 vial rum flavoring
- 1/4 cup water (boiling)
- 7 oz dark chocolate (extra)
- 2 tbsp sunflower seed oil
- 1 pinch erythritol (powdered or icing sugar)

Preparation
I used wholemeal dry biscuits rich in fiber: ORO Saiwa Fibrattiva, usually characterized by providing good glycemic responses – it’s always good to test on yourself.
* In case of allergies and food intolerances, replace with suitable biscuits.Seal the biscuits inside a freezer bag and crush them with a rolling pin until you achieve the desired size.
Break any pieces that are too large.Pour the biscuits into a bowl.
Add to the biscuits:
– the unsweetened cocoa powder;
– a pinch of cinnamon;
– a pinch of finely chopped dried red chili pepper [optional] in Modica chocolate style;
– 1/2 vial of rum flavoring;
and mix well to distribute the ingredients.In a saucepan, bring 1/4 cup of water to a boil, which you will need later.
Melt the dark chocolate in a double boiler or in a non-stick saucepan over very low heat, stirring with a silicone spatula.
Add the oil to the melted chocolate and incorporate.Pour into the bowl with the biscuits:
– the melted dark chocolate mixed with the oil;
– the 1/4 cup of boiling water;
and mix carefully until the mixture is homogeneous.Prepare a sheet of parchment paper and a sheet of aluminum foil large enough to wrap the chocolate and biscuit mixture.
Transfer the mixture to the center of the parchment paper and shape it – compacting it well – into the cylindrical shape of the salami.
Wrap the chocolate salami in the parchment paper and seal the edges like a candy.
Wrap further in the aluminum foil.Place the chocolate salami in the freezer for at least 2 hours to solidify.
After at least 2 hours, remove the chocolate salami from the freezer.
Gently open the aluminum foil and the parchment paper.
Finish with a sprinkle of erythritol in powder form – zero calories – or icing sugar and wrap with kitchen string to make the appearance of the chocolate salami more realistic.
Your light chocolate salami without the addition of butter, milk, or eggs is ready.
Serve sliced.

so you can easily take a single slice.
